Super Mario RPG: Legend of the 7 Stars.
Sure, it was a mouthful, and the game wasn't really all that hard, but there were soooo many hidden areas and whatnot. I still feel proud of myself for finding out about the lazy shell ALL BY MYSELF!
Star Fox was pretty sweet, and the 64 version wasn't half bad.
I also somewhat remember a game for the genesis called nights, or something like that. I always played it at a friends house, and I remember it was pretty sweet.

Err... that'd be the Saturn you're thinking of. And NiGHTS was a pretty awesome game indeed. I recently relocated my copy and its special controller when digging through my old house's garage prior to moving. Imagine how elated I was... ho-ho!
Anyway, there're so many classic video games, especially for the NES, that it's hard to choose my favorite. River City Ransom is already spoken for, as is Tetris, Marble Madness, and SMB3, but... what of good ol' "Mike Tyson's Punch-Out!!"? And I don't mean that POS hackjob "Punch-Out!! Featuring Mr. Dream" that they released 7 years later or so as part of a collection of rereleases. No, the one with Mike Tyson. Best boxing game ever.
OH CRAP, and another great game I simply must note is Goonies II. Absolute classic. Fighting eskimos and walruses, getting spring shoes from shady mermen, rescuing a mermaid, knocking old men and blind women senseless with a hammer in cubed corridors... all while underneath a restaurant and being chased around by the Fratellis. Good god, all that game was missing was Sloth...

yes, did you know that goonies 2 is the first video-game-of-a-sequel-that-doesn't-exist-that's-getting-a-sequel made? In otherwords, goonies 2 the game existed before the movie.

SNES - Mega Man X, Chrono Trigger, Link to the Past
Genesis - Shadow Dancer, Phantasy Star IV
Master System - Phantasy Star
NES - Adventure Island 1 and 2
32X - Chaotix (one of the only good games made for that system)
edit - sam beat me on the phantasy star series, but I still agree wholeheartedly

The future is going to have video games where you jack yourself into the computer and fight to the death, and if you die in the game you die in real life. I think ive seen something about it i just dont know where

Yet the movie has absolutely nothing to do with the game. Is the movie even actually in production yet? Hopefully it doesn't end up being like another "Without A Paddle."
On topic...Crystalis is my favorite old school NES game.
Edit: Marble Madness and SMB 3 blow. The entire Mario series sucks except for Mario 64, M&L Superstar Saga, and the Paper Mario's.
